1. Pan fry the fillet of steak slightly less than to your liking.
2. Remove from pan and leave to rest.
3. Finely chop the shallots and mushrooms and add to pan for 3–4 minutes.
4. Drain excess fat from pan. Return steak to pan and flame with Jameson Irish whiskey
5. Add the fresh cream and reduce for 2–3 minutes.
Serve with your preferred accompaniment. At Brooks it is served with sautéed potatoes and a crisp green salad
