Fillet of Steak with a Whiskey Cream

Introduction

Fillet of Steak with a Whiskey Sauce is a culinary classic.  Try this version from the head chef in Brooks Hotel, Pat McLarnon.

 

Do try to source Irish beef for this recipe!



 

Fillet of Steak with a Whiskey Cream

Ingredients

150g / 6oz Fillet Steak
1 Shallot
200g / 8oz Mushrooms
200ml / 8fl oz Fresh Cream
Generous measure of Jameson Irish Whiskey  

 

Serve with:


Sauteed Potatoes
Green Salad
 

 

Preparation method

1. Pan fry the fillet of steak slightly less than to your liking.

2. Remove from pan and leave to rest.
3. Finely chop the shallots and mushrooms and add to pan for 3–4 minutes.
4. Drain excess fat from pan. Return steak to pan and flame with Jameson Irish whiskey
5. Add the fresh cream and reduce for 2–3 minutes.

Serve with your preferred accompaniment. At Brooks it is served with sautéed potatoes and a crisp green salad
