John has been head barman here for the last 9 years and takes particular pride in his extensive whiskey and gin collection. His interest isn’t limited to Irish whiskeys, as he also stocks a good selection of different Scotches and Bourbons. He is also a very keen golfer, so for guests combining their visit to Cork with a round of golf on some of the region's world famous courses, such as Fota Island or The Old Head of Kinsale, John is probably as reliable for golf tips, as he is for whiskey recommendations. John isn't the only whiskey enthusiast behind the bar though. Ask for Tommy or Clare if you need guidance in your choice of whiskeys. Both regularly host whiskey tastings for guests in Hayfield Manor and have developed a keen interest in Irish whiskey.
There are two restaurants at Hayfield Manor – grandeur, style and superb contemporary Irish Cuisine in the Orchids Restaurant combine to create a magnificent gourmet experience, whereas Perrotts Garden Bistro is an informal dining option, specialising in Mediterranean and international cuisine. Both restaurants are a good place to enjoy one of the many whiskeys on offer, be it as an aperitif or as an after dinner drink. Whiskey porridge is another speciality in the morning and a good excuse to get those healthy oats into you!
